Healthy Eats: Cucumber Salad Benefits and Recipe

 

What’s in a cucumber? Lots of great nutrients.

Its high water content makes for great eat in the hot weather because it’s refreshing and helps prevent dehydration. It contains Vitamin K and calcium which help promote healthy bones. It also contains potassium and magnesium and is a great source of fiber. There have been reports that cucumber can stop cancer cells from multiplying, however, this has yet to be corroborated by medical research.

So the next time you’re craving something healthy to munch but quick to prepare, give this salad a try. Below is a recipe.

Cucumber salad recipe

Ingredients:
2 medium thinly sliced cucumbers
1/3 cup white vinegar
1/3 cup water
2 tablespoons sugar
½ teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place the sliced cucumbers in a bowl.
  • In a tightly covered container, shake all of the ingredients and pour over cucumbers. To blend flavors, cover and refrigerate for at least 3 hours; otherwise refrigerate for 10 minutes.
  • Drain cucumbers and leave covered in refrigerator until ready to serve.
