Coconut Rice Recipe:
Ingredients
½ Coconut
1 Tbsp coconut oil
2 ½ Cups long grain basmati rice
1 Small onion
½ tsp iodated salt
Preparation
- Crack the coconut into two. Remove the flesh and place in a bowl together with the coconut water.
- Slice the onions and put aside.
- Blend the coconut water to form very smooth paste. (Note: You can use this paste as is or strain to get rid of any solids).
- Heat the coconut oil in a pot over medium heat and add the onions. Allow to cook for 2 minutes.
- Add the rice to the pot and allow to cook for 15-20 minutes. (Depending on personal preference, you may need to wash the rice and drain the water from it before cooking it).
- Add the coconut paste and salt to the rice and stir. You may need to add some more water because the coconut paste may not be enough to cook the rice.
- Serve when rice is well cooked.
