Potato Salad: How to Make it Healthy for Your Easter Feast

Recipe – Greek Potato Salad:

Ingredients:

2 lbs red potatoes, cut into 1 inch pieces

1/2 cup sliced red onion

1/2 cup fresh parsley (chopped)

1/2 cup sliced kalamata olives

1/2 cup crumbled feta cheese

2 tbsp olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper to taste

Instructions:

  • Cook potatoes in boiling water for 10-15 minutes or until tender. Drain and set aside to cool.
  • In a large bowl, mix together the potatoes, red onion, parsley, olives, and feta cheese.
  • Whisk together the olive oil, red wine vinegar, oregano, salt, and pepper in a separate bowl. 
  • Pour the dressing over the potato mixture and gently mix to combine. Serve chilled.

Recipe – Avocado Potato Salad:

Ingredients:

2 lbs yellow potatoes, cut into 1 inch pieces

2 ripe avocados, diced

1/2 cup red bell pepper (diced)

1/4 cup chopped fresh cilantro

1/4 cup fresh lime juice

2 tbsp olive oil

Salt and pepper to taste

Instructions:

  • Cook potatoes in boiling water for 10-15 minutes or until tender. Drain and set aside to cool.
  • Mix together the potatoes, avocado, red bell pepper, and cilantro in a large bowl.
  • In a separate bowl, whisk together the lime juice, olive oil, salt, and pepper.
  • Pour the dressing over the potato mixture and gently mix to combine. Serve chilled.
