Peppered shell on shrimp recipe

For this recipe, allow for 10 minutes of meal prep and about 20 minutes of cooking time.

Ingredients:

20 Shell on shrimps (mid-large size)
20 Red bell peppers (tatashe)
10 Habanero peppers
5 tomatoes (mid-size)
1 Large onion
1 Ginger (mid-size)
5 Cloves garlic
1 Tbsp dried thyme
1 Tbsp dried rosemary
Salt (to taste)
5 Tbsp canola oil (or preferred oil but make it a healthy one)

Preparation:

  1. Thoroughly wash the shrimps with salt and water. Set aside.
  2. Next, blend the red bell peppers, habanero and tomatoes all together.
  3. After this, blend the garlic and ginger together. Pour it onto the shrimps, stir to ensure even distribution and then cover.
  4. Cut the onion into cubes and set aside.
  5. Under medium heat, place a large saute pan or pot whichever you prefer, on the stove.
  6. Add the oil and onions, and allow to cook for one minute
  7. Now, pour in the bell pepper, habanero and tomato mix. This is a good time to add the salt, thyme and rosemary.
  8. Stir Regularly for about 10 minutes.
  9. Add the shrimps with garlic and ginger, and stir.
  10. Allow to cook for another 20 minutes.
  11. Serve with jeera rice or roasted potatoes and some shito

You’ll notice very minimal sauce once food is done cooking. The idea is not to have your protein sitting in a large pot of stew. Rather, it should absorb the sauce and its flavors.
